12 DAYS OF BLOGMAS | TWO EASY FESTIVE TREATS

ON THE 9TH DAY OF BLOGMAS, BLUSH & NOISE GAVE TO ME, TWO FESTIVE RECIPES

There's nothing I love more about Christmas than the food. I mean the people you're eating it with obviously count but the company isn't going to fill my stomach like cake and roast potatoes do. These recipes are so easy to pull off, and they're a little bit different from your normal festive treats! 

I've made some super time saving, yet delicious mince pies with a delicious twist of a sponge cake top, and I've made sure there's no waste of sponge cake with this super quick and quickly mini heart shaped mini Victoria sponge cakes - For those who don't like mince pies! Blush & Noise have got you covered! 



WHAT YOU WILL NEED.. 

MINCE PIES 
  • MINCE MEAT 
  • JUST ROL SHORT CRUST PASTRY - GOTTA SAVE TIME! 
  • A CUPCAKE TIN 
  • BUTTER FOR CREASING 
  • MILK FOR WASHING OVER TOP OF THE PIES 
VICTORIA SPONGE CAKE 
  • 1 CUP OF SELF RAISING FLOUR 
  • 1 CUP CASTER SUGAR 
  • 150 GRAMS OF BUTTER 
  • 1/2 TEA SPOON OF VANILLA EXTRACT 
  • 1/2 TEA SPOON OF BAKING POWDER 
  • 2 FREE RANGE EGGS 
  • ICING SUGAR FOR DUSTING 
  • JAM (FLAVOUR OF YOUR CHOSE, I CHOSE BLACK CHERRY) 
  • SQUIRTY CREAM 


METHOD TO THE MADNESS.. 

  1. PRE-HEAT OVEN TO GAS MARK 6 
  2. MIX DRY INGREDIENTS FOR THE VICTORIA SPONGE (FLOUR,SUGAR,BAKING SODA) 
  3. ADD EGGS, VANILLA EXTRACT AND SOFT BUTTER TO THE MIXTURE AND MIX UNTIL SMOOTH AND CREAMY (USUALLY TAKES ABOUT 2-3 MINUTES WITH AN ELECTRIC MIXER) 
  4. SCOOP MIXTURE INTO A CREASED SQUARE TIN (I USED A BROWNIE TIN) AND POP INTO OVEN FOR AROUND 15-20 MINUTES OR UNTIL YOU CAN PULL A KNIFE OUT OF THE CAKE COMPLETELY CLEAN 
  5. GREASE CUPCAKE TIN WITH BUTTER 
  6. ROLL OUT AND CUT LARGE CIRCLE SHAPES OUT OF THE JUST ROL PASTRY 
  7. GENTLY PUSH AND SPREAD THE PASTRY INTO THE CUPCAKE TIN, BE SURE TO MAKE SURE THE SIDES ARE HIGH ENOUGH TO HOLD THE MINCEMEAT 
  8. PUT ABOUT A 1 1/2 TEASPOONS OF MINCEMEAT INTO EACH CASE, BE SURE NOT TO OVERFILL THEM AS THE MINCEMEAT WILL LEAK OUT 
  9. WASH THE CORNERS OF THE PASTRY OVER WILL MILK, TO ENSURE THEY GO GOLDEN BROWN IN THE OVEN! 
  10. BAKE UNTILL THE PASTRY IS GOLDEN (ABOUT 10 MINUTES) 
  11. REMOVE VICTORIA SPONGE CAKE FROM OVEN AND LEAVE TO COOL FOR ABOUT 20 MINUTES 
  12. ONCE COOLED, REMOVE FROM TIN. IF YOUR CAKE IS UNEVEN OR TOO THICK, USE A CAKE WIRE OR SHARP KNIFE TO EVEN OUT THE CAKE 
  13. CUT OUT SMALL SHAPES IN THE VICTORIA SPONGE CAKE, TO BE USED AS TOPPERS FOR YOUR MINCE PIES! 
  14. ONCE YOUR PIES ARE OUT OF THE OVEN AND COOLED, SIMPLY POP THE SPONGE CAKE SHAPES ON TOP AND DUST WITH ICING SUGAR 
  15. IF YOU HAVE ANY SPARE SPONGE CAKE, CUT OUT TWO LARGE SHAPES OF YOUR CHOISE AND LAY JAM AND SQURTY CREAM ONTO ONE SIDE 
  16. PLACE THE TOP ONTO THE CAKE AND DUST WITH ICING SUGAR 
  17. SERVE WITH A CUP OF TEA/HOT CHOCOLATE OR MULLED WINE FOR YOU PREFECT FESTIVE TREAT! 


So there you have it, two super easy festive treats that almost anyone can pull off! Although the Victoria Sponge Cake's aren't festive, I thought you would be a fool to waste cake, so why not make a treat for a family member or friend that doesn't like mice pies! Waste no what not as they say!

  3. The Victoria sponge cake looks delicious, they both do but I haven't seen the victoria sponge in a christmas recipe post so far and it's definitely being overlooked :)

  5. The pies and the cake look delicious! I used to eat lots of mince pies when I lived in the UK; they were my favourite pre-Christmas treat.
